Do you want to make enchiladas but you don’t have a can of sauce on hand? Save a little money and get a little more flavor with this home made Enchilada Red Sauce. This recipe will make 2-3 cups of sauce.

Ingredients
- 1/2 cup canola or olive oil
- 1/4 cup flour
- 1/4 cup chili powder
- 1 cup chicken stock or broth
- 1 15 oz can of tomato sauce
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp onion powder
Instructions
- Pour the tomato sauce into a fine mesh strainer, to thicken it slightly.
- Heat the oil in a skillet over medium high heat.
- Whisk in the flour and chili powder, continuing to whisk until the flour starts to brown.
- Add the chicken stock and tomato sauce to the roux, whisking continuously while adding them.
- Add the seasonings and whisk through.
- Turn the heat down to medium and simmer for ~10 minutes until it reaches the right consistency.
