Enchilada Red Sauce

Ingredients
  

  • 1/2 cup canola or olive oil
  • 1/4 cup flour
  • 1/4 cup chili powder
  • 1 cup chicken stock or broth
  • 1 15 oz can of tomato sauce
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp onion powder

Instructions
 

  • Pour the tomato sauce into a fine mesh strainer, to thicken it slightly.
  • Heat the oil in a skillet over medium high heat.
  • Whisk in the flour and chili powder, continuing to whisk until the flour starts to brown.
  • Add the chicken stock and tomato sauce to the roux, whisking continuously while adding them.
  • Add the seasonings and whisk through.
  • Turn the heat down to medium and simmer for ~10 minutes until it reaches the right consistency.
