Sweet Potato Fries

These are a great snack or side dish that goes well with Southern dishes. I like to make them after I deep fry a turkey, while the turkey is resting, since they only take about 5 minutes to cook in the hot oil. They are simple to prep and they disappear in a hurry so I know they’re delicious.
Since sweet potatoes aren’t starchy like regular potatoes, the corn starch is the key to getting them crispy on the outside.
