Cranberry Salad

For the holidays, I like to make a cranberry salad from scratch and not just pour it out of a can. This recipe has that distinct cranberry flavor, with some more complexity from the other ingredients.

Ingredients
  

  • 1 12 ounce bag of fresh cranberries
  • 1 cup orange juice or the juice of two oranges
  • 1 cup white sugar
  • 1 orange peeled and pureed
  • 1 apple peeled and chopped
  • 1 pear peeled and chopped
  • 1 cup chopped dried mixed fruit cherries, apricots, etc
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions
 

  • Grate one of the orange peels to use later as garnish.
  • In a medium saucepan, boil the orange juice and sugar until the sugar dissolves.
  • Peel the orange and puree it.
  • Peel, quarter and chunk the apple and the pear.
  • Combine with the dried fruit and coarse chop in a food processor.
  • Reduce the heat to a simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, salt, cinnamon, and nutmeg.
  • Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst.
  • Remove from heat, and let cool to room temperature.
  • Garnish with a little grated orange peel.
