For the holidays, I like to make a cranberry salad from scratch and not just pour it out of a can. This recipe has that distinct cranberry flavor, with some more complexity from the other ingredients.

Ingredients
- 1 (12 ounce) bag of fresh cranberries
- 1 cup orange juice (or the juice of two oranges)
- 1 cup white sugar
- 1 orange, peeled and pureed
- 1 apple, peeled and chopped
- 1 pear, peeled and chopped
- 1 cup chopped dried mixed fruit (cherries, apricots, etc)
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Grate one of the orange peels to use later as garnish.
- In a medium saucepan, boil the orange juice and sugar until the sugar dissolves.
- Peel the orange and puree it.
- Peel, quarter and chunk the apple and the pear.
- Combine with the dried fruit and coarse chop in a food processor.
- Reduce the heat to a simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, salt, cinnamon, and nutmeg.
- Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst.
- Remove from heat, and let cool to room temperature.
- Garnish with a little grated orange peel.
