This hearty breakfast is delicious, and the whole cooked eggs are a nice change from the typical breakfast casserole with scrambled eggs.

Ingredients
- 4 slices thick cut bacon
- 1# hash browns
- ½ medium onion, diced
- ½ green or red pepper, diced
- ½# breakfast sausage
- ½# smoked rope sausage, sliced
- 2 limes
- 4-6 eggs
- Seasoning
Instructions
- Preheat the skillet and apply some non-stick spray.
- Fry the bacon in the skillet until reduced to half.
- Remove the bacon and cut up when cooled.
- Add the smoked sausage to brown, and remove.
- Add the onion, pepper, and pork sausage, break up and cook 5 minutes, then remove.
- Add the hash brown potatoes and stir through the grease
- Season the potatoes and cover the pan – cook another ~5 minutes and then stir.
- Add all of the meats and vegetables, stir it through, level it off, and squeeze the limes over it
- Cover and let it cook for another 1-2 minutes
- Crack your eggs, evenly spaced over the potatoes and season. Let them cook for a minute before covering again. Cook covered until the eggs are done.
- Serve with a twist of lime and cilantro leaves for garnish.
