Breakfast Skillet

Ingredients
  

  • 4 slices thick cut bacon
  • 1 # hash browns
  • ½ medium onion diced
  • ½ green or red pepper diced
  • ½ # breakfast sausage
  • ½ # smoked rope sausage sliced
  • 2 limes
  • 4-6 eggs
  • Seasoning

Instructions
 

  • Preheat the skillet and apply some non-stick spray.
  • Fry the bacon in the skillet until reduced to half.
  • Remove the bacon and cut up when cooled.
  • Add the smoked sausage to brown, and remove.
  • Add the onion, pepper, and pork sausage, break up and cook 5 minutes, then remove.
  • Add the hash brown potatoes and stir through the grease
  • Season the potatoes and cover the pan – cook another ~5 minutes and then stir.
  • Add all of the meats and vegetables, stir it through, level it off, and squeeze the limes over it
  • Cover and let it cook for another 1-2 minutes
  • Crack your eggs, evenly spaced over the potatoes and season. Let them cook for a minute before covering again. Cook covered until the eggs are done.
  • Serve with a twist of lime and cilantro leaves for garnish.
