Preheat the skillet and apply some non-stick spray.
Fry the bacon in the skillet until reduced to half.
Remove the bacon and cut up when cooled.
Add the smoked sausage to brown, and remove.
Add the onion, pepper, and pork sausage, break up and cook 5 minutes, then remove.
Add the hash brown potatoes and stir through the grease
Season the potatoes and cover the pan – cook another ~5 minutes and then stir.
Add all of the meats and vegetables, stir it through, level it off, and squeeze the limes over it
Cover and let it cook for another 1-2 minutes
Crack your eggs, evenly spaced over the potatoes and season. Let them cook for a minute before covering again. Cook covered until the eggs are done.
Serve with a twist of lime and cilantro leaves for garnish.
