Tzatziki Sauce

Tzatziki is traditionally served as an appetizer and can be left on the table as an accompaniment to foods throughout the meal. The key to great tzatziki is the thick creamy texture that allows it to be eaten alone, as a dip, as a spread, and as a condiment.
Ingredients
- 2 cups (1 medium) cucumber seeded, finely chopped or grated and drained
- 1.5 cups of plain Greek yogurt
- 2 tablespoon of olive oil
- 1 tablespoon of lemon juice
- 2 tsp dill weed
- ½ tsp salt
- Freshly ground black pepper
- 2 to 4 cloves of garlic, finely minced
Instructions
- Grate the cucumber and sprinkle with salt to release the water.
- Mix the remaining ingredients together in a bowl.
- Squeeze the cucumber to remove any excess liquid. You can put it in a towel and then twist the towel to squeeze it.
- Add the drained cucumber to the yogurt mix and stir through.
- Drizzle with some additional olive oil and garnish with some dill or paprika.
