Ingredients
- 1 pound of ground beef
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1 Tbsp olive oil
- 2 Tbsp Taco Seasoning (or one packet)
- 2 cups of tater tots, or enough to cover the dish
- 1 can of red Enchilada sauce
- 1 cup of shredded cheese – Mexican Blend, Cheddar Jack, or Mozzarella
- 1/2 cup of sliced black olives and cilantro or chives for garnish
- Salsa and chips for on the side
Instructions
- Preheat your oven to 350 degrees F.
- Preheat your skillet over medium heat. Add the oil.
- Add the beef to the skillet and cook until browned.
- When the meat is about half done, add your diced onions and peppers to the skillet and cook until soft.
- Add the garlic and cook until fragrant.
- Add the Taco seasoning, stir through and cook for another 2 minutes.
- Add the can of Enchilada sauce, stir through and cook for another 2 minutes.
- Transfer the enchilada mixture to a sprayed 9×13 casserole dish.
- Cover the top with tater tots, and then sprinkle the cheese over the tots.
- Cook in the oven for 15-20 minutes until the tots are browned and the cheese is melted.
- Garnish with the olives and the cilantro or chives.
- Serve with salsa and chips.
