Super Nachos are delicious and quite quick and easy to make. They are sure to please, and if you double the recipe you can feed a party.

Ingredients
- 1 Onion, chopped
- 1 Bell Pepper, chopped
- 1# Ground Beef
- 2 Tablespoons Taco Seasoning or one packet
- 2/3s cup water (Dad’s tip – I use beer)
- 1 large bag of Restaurant Style Tortilla Chips
- 1# of shredded cheese – a Mexican blend if you find it.
- 1 cup of salsa
- Sour cream, to taste
- Green onions or chives, diced
- Black Olives
- Other options: jalapenos, diced tomatoes, sliced avocado, hot sauce
Instructions
- Preheat your oven broiler and set the rack about 6 inches under the broiler.
- Saute the onion and the bell peppers in a skillet with generous amount of oil. When browned and soft, remove to a bowl because you don’t want to overcook them.
- Next, brown the ground beef in the skillet. Add the taco seasoning and water, stir through and cook until the water is mostly evaporated and the meat is saucy.
- Cover a sheet pan with foil and spread the chips out.
- Spread the meat mixture out over the chips, and then sprinkle the shredded cheese over the top.
- Put the sheet pan under the broiler. You want to melt the cheese and brown the chips just a little – it may only take a minute or so.
- Pour the salsa evenly over the chips, and then top with some sour cream. Then spread the olives and other ingredients over the top and garnish with the chives.
- Serve on the sheet pan and let the group dig in!
