1# of shredded cheese – a Mexican blend if you find it.
1 cup of salsa
Sour cream, to taste
Green onions or chives, diced
Black Olives
Other options: jalapenos, diced tomatoes, sliced avocado, hot sauce
Instructions
Preheat your oven broiler and set the rack about 6 inches under the broiler.
Saute the onion and the bell peppers in a skillet with generous amount of oil. When browned and soft, remove to a bowl because you don’t want to overcook them.
Next, brown the ground beef in the skillet. Add the taco seasoning and water, stir through and cook until the water is mostly evaporated and the meat is saucy.
Cover a sheet pan with foil and spread the chips out.
Spread the meat mixture out over the chips, and then sprinkle the shredded cheese over the top.
Put the sheet pan under the broiler. You want to melt the cheese and brown the chips just a little – it may only take a minute or so.
Pour the salsa evenly over the chips, and then top with some sour cream. Then spread the olives and other ingredients over the top and garnish with the chives.
