Here’s another way to make good use of the tomatoes from your garden. If you like Spicy V-8, you’ll like this too.
Spicy Tomato Juice

Ingredients
- 4-6 cups tomatoes, quartered
- 1 carrot, diced
- 1 stalk celery, diced
- 1-2 hot peppers, ribs and seeds removed and peppers diced
- 1 bell pepper or 2 banana peppers, diced
- ½ cup fresh parsley, or a ¼ cup dry
- ¼ cup lemon juice
- 1 Tbsp Worcestershire sauce
- 1-2 tsp salt
- ½ tsp black pepper
- 1 cup water, divided
Instructions
- If you have a food mill, cook the tomatoes first and run them through the food mill to separate the seeds and skins from the pulp and juice.
- Combine the ingredients in a sauce pan with ½ cup of water and bring to a simmer for 20-30 minutes. You only want it soft enough to run through the blender, you don’t want to reduce it.
- Pour in a blender, add the other ½ cup of water and blend until smooth.
- Taste and adjust for salt and pepper and blend.
- If you want you can run this through a sieve to remove any remaining seeds and pieces, but this will take a long time and the sieve tends to catch a lot of the good vegetable pulp that makes this so healthy.
