Shasklik is Russian grilled meat, similar to a Shishkabob but with a more pungent marinade with a heavy emphasis on onion. Pork shoulder would be traditional, but this all works well with beef or chicken. I first had this when working in Ukraine and this recipe has that authentic flavor.

Ingredients
- 2# of meat – a fattier cut is better for this. Pork shoulder, beef chuck steak, or chicken thighs would be best.
- Marinade
- 2 onions
- 4 garlic cloves
- 1 cup of oil
- 1/2 cup of vinegar – plain white vinegar, wine vinegar, or balsamic vinegar would all work well
- 2 Tbsp lemon juice
- 2 Tbsp soy sauce
- 2 Tbsp brown mustard
- 2 Tbsp or more of red wine
- 1 Tbsp hot sauce
- Seasoning to taste
Instructions
- Process the onions and garlic down to a sauce with a food processor.
- Add the remaining marinade ingredients and mix.
- Cut the meat up into 1-2 inch cubes.
- Place the cubed meat into the marinade and refrigerate overnight and preferably 2-3 days.
- Place the meat on skewers and season.
- Cook the meat for about 10 minutes directly over hot coals, turning frequently.
- You can cook onions and tomatoes along with the meat, but I would put them on seperate skewers to keep them from charring too much.
- Serve over rice or egg noodles.
