This is a simple and quick recipe for making a delicious Italian side dish. This can go with just about anything, and it’s a great way to help use all that zucchini you’re getting.

Ingredients
- Zucchini, 2 large or 3 medium, cut into rounds or half-rounds
- Garlic, 3 cloves, minced
- 3-5 green onions, thinly sliced.
- Olive oil, 1 Tbsp
- Butter, 1 Tbsp
- Italian Seasoning
- Kosher Salt
- Cracked black pepper
- Lemon juice
- Parmesan cheese
Instructions
- Preheat a large skillet (so you can spread out the zucchini to brown) on medium low.
- Add the butter and olive oil to heat through.
- Add the garlic to flavor the oil and butter – you want to just cook it through, be sure to not let it burn.
- Turn the heat up and add the zucchini, the green onions, and the Italian seasoning. You may need to do the zucchini in batches, if you crowd the pan or stack the zucchini deep they will steam instead of saute’.
- Spread the zucchini out and let it sit so that it can brown in the pan.
- After a couple of minutes, give it a stir to allow it to brown on the other side.
- When done, sprinkle with the salt, pepper, and a generous amount of Parmesan.
- Remove to a serving platter or bowl, and add a few dashes of lemon juice over the top.
