Those rice side packages from the store are handy and they seem affordable, but rice sides are also very easy to make at home from scratch.

Notes
Here are the ingredients you can use to make different kinds of rice sides:
Asian Rice: chicken or beef broth, chopped onion, shredded carrot, green peas, Oriental 5 Spice to taste.
Broccoli Cheddar Rice: chicken broth, chopped onion, 2 cups chopped broccoli, 1/3 cup milk, 2 Tbsp butter, 1 cup shredded cheddar cheese
Chicken Rice: chicken broth, chopped onion, sage and parsley to taste.
Creole Rice: beef or chicken broth, chopped onion, bell pepper, and celery, Creole Seasoning.
Herb & Butter Rice: chicken broth, thyme, sage, parsley, 4 Tbsp butter
Mushroom Rice: beef broth, canned or fresh mushrooms, chopped onion.
Spanish or Mexican Rice: chicken broth, 1 can of Rotel, additional chopped onion or bell pepper to taste.
Teriyaki Rice: Beef broth, chopped onion, teriyaki sauce to taste
Ingredients
- 2 cups dry white rice
- 4 1/2 cups of stock or broth – beef, chicken, ham, vegetable, etc. You can use pre-made stock from the store, or make it with bouillon cubes, granules or a stock base (I personally love Better Than Bouillon)
- Vegetables such as chopped onion, mushrooms, bell peppers, celery, carrots, etc.
- Additional ingredients depending on what kind of side you are making.
Instructions
- Rinse the rice in a mesh colander, this will make it less sticky.
- Cook the rice in the stock as you would normally use water, simmering for 15-20 minutes until all of the stock is absorbed.
- While the rice is cooking, you can saute’ your vegetables and/or prep your other ingredients before adding to the rice.
