Remember loaded baked potatoes? This casserole is based on the same idea. It’s easy to make and it will satisfy a crowd at a party or a reunion.

Ingredients
- ~4# of potatoes – you can bake potatoes and cut them into bite sized pieces, or use canned potatoes, or use frozen country style hashbrowns from the store.
- 2 cups of sour cream
- 1 packet of Ranch dressing mix
- 1 pound bacon, cooked and chopped and/or diced ham
- 4 cups of shredded cheese (Cheddar, Mozzarella, Monterey Jack, CoJack, etc).
- 1 bunch of green onions, slices, whites and greens separated
Instructions
- Preheat your oven to 350 degrees F.
- Mix the sour cream and Ranch dressing packet together.
- Mix the potatoes, cooked bacon, sour cream mix, 2 cups of the shredded cheese, and the whites of the green onions together in a large bowl.
- Spray or grease a 9×13 casserole dish.
- Transfer the potato mix from your bowl to the casserole dish and spread out evenly.
- Top with the remaining shredded cheese and onion greens.
- Bake uncovered for 20 minutes.
