Mix the Worcestershire sauce with the egg, and then add the onion & pepper; add the oatmeal and mix the ingredients. Allow to sit for 20-30 minutes until the oatmeal absorbs all of the moisture.
Add the ground beef and mix thoroughly again (hands and fingers work the best). Chill the mixture for at least an hour or more before making the patties.
Divide the mixture into 3 or 4 and mold each into a ball. Flatten into patties with hands or use a patty maker.
Place the patties on a plate and set in the freezer for about an hour – this makes the patties easier to handle and allows you to get a good char on the outside of the burger without overcooking the center.
Apply the seasoning to one side of the burgers.
Place this side down on the grill. Season the other side when all of the patties are on the grill.
