Chops or steaks taste wonderful when cooked over a wood fire. For best results, let the fire burn down to red coals and place the grill over these. I like to use a grill basket to make it easier to handle and flip the meat.
You can use a marinade such as Carne Asada, Fajita, Shashlik, Teriyaki, or Tuscan.
Use your favorite seasoning; I like to use Cavenders, Creole, or Montreal Seasoning.
Grilled chops or steaks go great with a rice side dish and a fresh salad.

Ingredients
- 1 steak or chop per person
- A marinade of your choice
- The seasoning of your choice
Instructions
- Marinade the meat for at least 4 hours and preferably overnight
- Season the meat prior to cooking
- Cook the meat over red hot coals to an interior temp of 145 for beef and 155 for pork chops.
