Here’s another way to cook your Sunday roast. This method adds a lot of flavor and is really easy to do. This works best with a higher quality roast, such as a Top Sirloin Roast. The flavor is robust, so I like to serve it with both the dark gravy and some brown mustard.

Ingredients
- Top Sirloin Roast 3-4#
- Olive oil
- 8 cloves garlic, minced fine
- 1 tablespoon rosemary
- 1 tablespoon basil
- 1 tablespoon kosher salt
- ½ tablespoon cracked pepper
Instructions
- Pat the roast completely dry.
- Mix the rest of the ingredients to make the paste rub. Add just enough olive oil to make the dry ingredients into a paste.
- Apply the paste to the roast and wrap in plastic. Refrigerate overnight.
- Heat your grill as hot as it can get.
- Clean and oil the grate.
- Sear the roast on high for 5 minutes on each side.
- Place the roast in a roasting pan with rack and put back on the grill.
- Turn one burner off and turn the other burner to medium.
- Roast for 45-60 minutes, until 140 degrees internal temperature.
- Remove the meat, leaving it on the rack and let it rest covered with foil for 10 minutes.
- Use the drippings in the pan to make a nice dark gravy.
