Fried Rice

This is a great side dish for any Asian meal, fried rice can be made with a wide variety of ingredients and seasonings. It’s a great way to use leftover white rice, otherwise you will have to cook some rice ahead of time. I’ve had this recipe for a long time, but I recently updated it with some ideas from Aaron & Clair on YouTube.
Ingredients
- 4 cups cold cooked rice, grains separated
- 2 eggs, lightly beaten
- 1 Tbsp soy sauce – You can also use other Asian sauces such as oyster, fish or Hoisin for variety.
- 3 drops sesame oil
- 1 ½ Tbsp of a neutral oil such as canola
- 6 green onions, chopped, whites and green separated
- Optional Ingredients
- 1/2 cup finely chopped sweet onion
- 1/2 cup finely chopped carrot (very small)
- 1/2 cup frozen peas , thawed
- 1 cup bean sprouts
- A dozen cooked shrimp
- Ground pork sausage
Instructions
- Beat the eggs and mix in the soy sauce, the sesame oil, and 1 Tbsp of the regular oil.
- Add the rice to the eggs and mix thoroughly.
- Add 1/2 tbsp oil to your wok or skillet, and add the whites from the green onions to make onion oil.
- Once you can smell the onions cooking, add the egg/rice mixture.
- Stir fry the eggs and rice, stirring continuously to keep the rice grains separated.
- Add any or all of the optional ingredients, stirring or tossing constantly until they are thoroughly cooked.
- Add the onion greens last, cooking only long enough to warm them up.
- Serve as a side dish or a base for any oriental meat dish.
