French Onion Skillet Pork Chops

If you like French Onion soup, this a great recipe for you. Preparation takes time and patience (especially caramelizing the onions) but it is so worth it. As an added bonus, this is a one dish meal. If you have any caramelized onions left over, you can also make some onion dip.
I found this originally as a chicken breast recipe, but to me there are already too many chicken breast recipes in the world. A beef steak has too much good flavor on it’s own so I decided to go with pork loin chops for this.

Ingredients
- 2# of onions, chopped or sliced
- 1 tsp Salt
- 1 tsp Brown Sugar
- 1/8th tsp Baking Soda
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- 2 tsp Balsamic Vinegar
- 4 thick cut boneless pork chops
- 2 cups of beef broth
- 2 Tbsp flour
- 1 cup grated Swiss cheese, or 4 thick slices (or 8 thin slices) of Swiss Cheese.
- Fresh parsley
Instructions
- Chop or slice the onions, and stir through the salt, brown sugar and baking soda and allow to stand at least 10 minutes.
- Preheat a cast iron skillet and then add a tablespoon each of olive oil and butter.
- Add the onions, and gently cook over medium heat.
- The goal is to caramelize them but not burn them so it will take a while, 30-40 minutes.
- When close to done, add the balsamic vinegar to the onions and stir through.
- When the onions are caramelized, remove them from the pan.
- Add some more oil to pan. Season and brown the pork chops.
- Cook the chops to 140 degrees F and remove them from the pan.
- Add the beef broth to the pan and stir/scrape to de-glaze the pan.
- Add the flour, whisk it into the beef broth, and then bring it back to a simmer to thicken.
- Add the onions back to the pan and then place the loin chops on top of the onions in the skillet.
- Spoon some sauce and onions over the chops and then cover each chop with Swiss cheese.
- Place the skillet in a 375 degree oven for 5-7 minutes.
- Remove from the oven and sprinkle with fresh parsley.
