Energy Bites

These are a delicious snack that is great for the kids or out on a hike – they’re so good my grandson calls them cookie balls! They are also a healthy snack that can fuel your next adventure. These are easy to make and keep well in the fridge.

Energy Bites

Ingredients
  

  • 1 cup old-fashioned oats plus a little more if too wet.
  • ½ cup creamy peanut butter or almond butter plus a little more if too dry
  • ½ cup ground flaxseed
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp kosher salt
  • Optional add-ins I recommend using two or three of them
  • ½ cup unsweetened coconut
  • ½ cup mini chocolate chips
  • ½ cup mini M&Ms
  • ¼ cup raisins or dried cranberries
  • ¼ cup chopped nuts
  • 2 tablespoons of cocoa powder
  • 1 Tbsp chia seed
  • ½ tsp cinnamon

Instructions
 

  • Put all of the ingredients in a large mixing bowl, and mix thoroughly.
  • If too wet, add a little more oatmeal. If too dry, add a little more nut butter.
  • Store in the fridge for 1-2 hours to firm up.
  • Roll into 1” balls – a cookie dough scoop can work good for this. Also, rubbing a small bit of oil on to your hands will make rolling easier. This should yield ~24 balls.
  • Store on the counter for 2-3 days, in the fridge for 2-3 weeks, or in the freezer for months.
