These are a delicious snack that is great for the kids or out on a hike – they’re so good my grandson calls them cookie balls! They are also a healthy snack that can fuel your next adventure. These are easy to make and keep well in the fridge.
1 cup old-fashioned oats (plus a little more if too wet).
½ cup creamy peanut butter or almond butter (plus a little more if too dry)
½ cup ground flaxseed
1/3 cup honey or maple syrup
1 tsp vanilla extract
¼ tsp kosher salt
Optional add-ins (I recommend using two or three of them)
½ cup unsweetened coconut
½ cup mini chocolate chips
½ cup mini M&Ms
¼ cup raisins or dried cranberries
¼ cup chopped nuts
2 tablespoons of cocoa powder
1 Tbsp chia seed
½ tsp cinnamon
Instructions
Put all of the ingredients in a large mixing bowl, and mix thoroughly.
If too wet, add a little more oatmeal. If too dry, add a little more nut butter.
Store in the fridge for 1-2 hours to firm up.
Roll into 1” balls – a cookie dough scoop can work good for this. Also, rubbing a small bit of oil on to your hands will make rolling easier. This should yield ~24 balls.
Store on the counter for 2-3 days, in the fridge for 2-3 weeks, or in the freezer for months.
