This is an easy coffee cake that can be made with a variety of different fillings. I’ve made it with apple, blueberry, and cherry and they were all great! With 4 eggs, this makes a smooth and rich batter. It also makes a enough to feed a crowd.

Ingredients
- 1 c. sugar
- 4 eggs
- 1 c. oil
- 1 tsp. baking powder
- 2 c. flour
- 1/2 tsp. salt
- 1 can pie filling (blueberry, cherry, apple, etc)
- 1 tsp. cinnamon
- 2 tbsp. brown sugar
Instructions
- Preheat oven to 350.
- Mix the sugar and eggs with a hand mixer; add the oil and mix.
- In another bowl, sift together the flour, baking powder, and salt.
- Mix the dry ingredients with the eggs.
- Grease and flour a 9 x 13 inch pan.
- Pour ½-2/3 of the batter into the bottom of the pan.
- Evenly add the pie filling across the whole pan.
- Add the rest of batter on top of the pie filling.
- Mix the brown sugar and cinnamon together. Sprinkle over the batter.
- Bake for 40 to 45 minutes.
