This is a great recipe for when you have company over. It makes a rich and delicious sandwich that goes with just about anything. Since it’s a slow cooker recipe its also very forgiving on time (provided you start it on time) and you can have dinner ready long before people come arrive which frees you up to do other preparations.

Ingredients
- 1 Medium Yellow Onion – sliced
- 5 Cloves of Garlic – minced
- Salt & Pepper
- 1/4 Cup Butter
- 2½ lbs Boneless Skinless Chicken Breast
- 8 oz Quartered Artichoke Hearts
- 1½ Cups Chicken Stock
- Juice from 1/2 a Lemon
- 4 oz Cream Cheese
- 1/2 Cup Plain Greek Yogurt
- 1 Cup Shredded Mozzarella Cheese
- Parsley
Instructions
- Put the onions, garlic, salt, pepper, and butter on the bottom of the slow cooker.
- Next, place the chicken breasts and artichoke hearts in an even layer on top of the onions. Pour the chicken stock over the top.
- Cover and cook on low for 5 hours.
- Shred the chicken breasts on a cutting board with two forks and put back into the crock pot.
- Add the lemon juice, cream cheese, Greek yogurt and mozzarella and stir through.
- Remove the lid and cook on High for 45 minutes or an hour until the sauce thickens up.
- Garnish with parsley,
