I saw this (several times) on the internet, so I gave it a try. It was simple, and it was okay, but not great. By adding a couple of steps and small ingredients, the second try turned out much better. I used Blueberries, but any berry would be delicious.

Ingredients
- ½ cup rolled oats
- 2.5 Tbsp flour
- 2.5 Tbsp brown sugar
- 2.5 Tbsp melted butter
- 1 cup Cottage Cheese
- 2 large eggs
- ¼ cup honey
- ½ tsp cinnamon
- ¼ tsp vanilla extract
- ½ cup berries, fresh if available (reserve some for the top)
Instructions
- Preheat your oven to 350 degrees F.
- Butter or spray a 3-4 cup baking dish.
- Combine the oats, flour and brown sugar, and then add the melted butter and mix through.
- Press the oats mix into the bottom of the baking dish.
- Combine the cottage cheese, eggs, honey, cinnamon, vanilla and salt and then beat with a hand mixer.
- Add most of the blueberries and gently fold them in.
- Pour this into the baking dish and spread evenly over the oats. Top with the remaining blueberries.
- Bake for 45-50 minutes until golden brown.
- Let cool for 10 minutes before serving.
