Creamed Chipped Beef on Toast

Famous to many in the military as S.O.S, this was one of my favorite meals growing up. The creamy sauce is a subtle yet rich counter-point to the salty beef. I’ll be sharing the recipe made with dried beef, but you can also use this same recipe to make a meal with browned ground beef or a side dish with cut up asparagus.

Ingredients
- ½ cup butter or margarine
- 4-5 oz dried beef chopped up (or 1# browned ground beef or 1# asparagus for a side dish)
- ½ onion, minced
- salt and pepper or a seasoning blend, to taste
- ½ cup all-purpose flour
- 2 cups milk
- ½ cup sour cream
- 2 tablespoons chopped parsley (or 2 teaspoons dried parsley flakes)
Instructions
- Melt the butter in a saucepan over medium-low to medium heat.
- Cut the beef into thin strips; add to the melted butter.
- Add the onion and cook until soft.
- Blend in the flour and stir it through; keep stirring and cook it until it takes on some color.
- Gradually add the milk and continue to cook, stirring constantly, until thickened and bubbling.
- Stir in the sour cream and parsley, and check for seasoning; heat through.
- Add milk if needed to thin.
- Serve over toast, English muffins, mashed potatoes or rice.
- Makes 4 servings (2 slices of smothered toast per person).
