This was a dish my mom used to make, and I hadn’t thought about it for 40 years. And then recently I was trying to think of a good side dish for a dinner and this popped into my head. While it sounds really plain and simple, it is absolutely delicious and very easy to make.

This can also be made using cabbage instead of celery, or a mix of both.
Ingredients
- 12 stalks Celery
- 2 Tbsp butter
- Salt & Pepper to taste
- ¾ cup chicken stock
Instructions
- Wash and trim the celery
- Reserve any leaves and chop them for a garnish.
- Cut on the bias into 1-inch chunks
- Melt the butter in a covered skillet
- Add the celery, salt and pepper and sauté for 5 minutes until it begins to soften.
- Add the stock and bring to a simmer
- Cover and cook for 5 minutes
- Uncover and cook until stock evaporates
- Serve garnished with the chopped celery leaves
