Sometimes you want something a little different from pancakes. These waffles are light on the inside and crunchy on outside. Those little holes catch your butter and syrup instead of letting them just run off onto the plate. You can make these plain or with added fruit.

Ingredients
- 2 ½ cup flour
- ½ tsp. salt
- 1 tsp baking soda
- 2 tsp baking powder
- 2 cups of buttermilk (or 2 cups of milk + 2 Tbsp lemon juice)
- 4 eggs, separated into yolks and whites
- 1 stick melted butter
- 1 tsp vanilla extract
Instructions
- Mix the dry ingredients together.
- Add the egg yolks and vanilla extract to the butter milk and blend well. Add the melted butter and blend well.
- Add the dry ingredients to the wet, a half cup at a time and mix together.
- Beat the egg whites until fluffy and then fold into the batter.
- Bake in a waffle iron until golden.
- For variety, you can add fruits such as blueberries, strawberries, or chopped apples to the batter before cooking or over the top after.
- Serves 4-6 people.
