Brats & Eggs

I cook this for supper when I’m camping, but it was inspired by my days in Wisconsin where brats were often served as a breakfast sausage. You can mix things up by using different vegetables, different seasonings, or different cheese. As long as there are brats and eggs, it’ll be good.

Brown the brats first so they slice easier.
Brown the sliced brats with the vegetables.
Add the eggs and cook until done.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 3-4 eggs
  • 2 bratwurst
  • 1/4 large onion
  • Red bell pepper
  • Seasoning your choice
  • Grated Cheese I like sharp cheddar

Instructions
 

  • Dice the onion and peppers first.
  • Crack the eggs into a mug, and stir them up along with some seasoning.
  • Preheat your skillet over the fire or stove.
  • Brown the whole bratwurst. Just enough for them to get firm enough to slice.
  • Slice the bratwurst, then finish browning them in the skillet along with the onions and peppers.
  • Add the eggs and stir them through.
  • Cook until the eggs get firm – you can cover the skillet to help them cook more evenly.
  • Sprinkle with the shredded cheese, and give it a little time to melt.
  • I like to top it with some hot sauce.
