Ok, so these are pretty much Yankee tacos, but they taste good and their roots are South of the Border. These are quick and easy to make, they’re healthy, and they are delicious. They are also flexible using a wide variety of ingredients, depending on what you have on hand or growing in the garden.

Ingredients
- 2# of ground beef
- 2 packets, or 4 Tbsp of Taco Seasoning
- 1/2 cup of water, or 1 cup of salsa
- 8 tortillas – we like the big burrito size soft tortillas and we like to roll them up for easier eating.
- Optional Toppings:
- Chopped tomato
- Chopped onion – yellow, white, red, or green
- Chopped sweet pepper – Bell, Banana, Anaheim, Hatch, Poblano
- Chopped hot pepper – Jalapeno, Serrano, Cayenne
- Chopped black olives
- Shredded lettuce
- Salsa
- Hot Sauce
- Guacamole
- Sour Cream
Instructions
- Brown the ground beef in a skillet, then add the taco seasoning and the water or salsa, let simmer until thickened.
- While the ground beef browns, chop your veggies and prep your other toppings.
- Put the ground beef in the skillet in the middle of the table and let everyone make their own tacos.
