Mississippi Pot Roast

This was apparently a big thing on the food blogs a few years ago. I missed it then, but found it just a little while ago. Some of the ingredients may raise the healthy eyebrow, but it is easy to make, and it is delicious. You can serve this on buns, over mashed potatoes or with rice.

Ingredients
- 3-4# Chuck Roast
- Salt & Pepper
- Cooking Oil
- 1 packet Ranch Dressing
- 1 packet Au Jus mix
- 6-8 Pepperoncini peppers
- 1 stick of butter
Instructions
- Season the beef with salt and pepper and brown the meat on all sides in an oiled skillet (you can skip this step if you would like to make it easier, but it adds a lot of flavor to the roast).
- Remove the meat and move to the slow cooker
- Premix the Ranch and Au Jus packets, and spread over the top of the meat in the slow cooker.
- Top the roast with the pepperoncini and slices of the butter
- Cook on low for 8 hours or on high for 4 hours.
