Pork shoulder steaks are awesome. They are flavorful, they work well with a variety of seasonings and marinades, they are difficult to overcook, and they are very affordable. This simple recipe has it’s roots in St. Louis where pork steaks first became popular.

Ingredients
- 4 Pork Shoulder Steaks
- Brine
- Black Pepper, or a low salt BBQ Rub
- BBQ Sauce
Instructions
- I like to brine the pork steaks overnight to add flavor and moisture.
- Preheat your grill to high (they taste even better cooked over an open fire).
- Remove the pork steaks from the brine and let them drain.
- Place the pork steaks on the hot grill and season with freshly ground black pepper (the brine should have made them salty enough) or a low salt pork rub.
- Reduce the heat to medium high, and cook on each side for 4-5 minutes.
- Brush the pork steaks with BBQ sauce, and cook them another 4-5 minutes on each side.
- Cook the pork steaks until they feel firm when you pick them up. Internal temp will be in the 150-165 range.
