Here’s an old favorite recipe; a one pot meal that’s delicious and will satisfy a family. It cooks quickly for a Dutch Oven meal and you can decide how spicy you want it to be.

Dutch Oven Chili Mac

Ingredients
  

  • 1 Tbsp oil
  • 1 # lean ground beef
  • 1 medium onion chopped
  • Salt and black pepper to taste
  • 2 garlic gloves minced or 2 tsp garlic powder
  • 1 Tbsp chili powder
  • 1 Tbsp brown sugar
  • ½ Tbsp cumin
  • Pint tomato sauce
  • 2 cups water
  • 8 oz elbow macaroni
  • 1 cup corn
  • 3 oz diced chilies
  • 1 Tbsp dried cilantro
  • 2 cups Monterey Jack or Mexican blend cheese

Instructions
 

  • Start 28 coals, when white place the Dutch Oven over the coals.
  • Add the oil and when hot brown the ground beef and onion.
  • Add the spices and seasonings and stir through until fragrant.
  • Add the tomato sauce, water, macaroni, corn, & chilies.
  • Place the lid on the Dutch Oven and bring this to a boil.
  • Add half of the cheese and then move half the coals to the lid. Cook for 15 minutes.
  • Give it a stir and put the other half of the cheese and the cilantro over the top.
  • Replace the lid and cook for another 15 minutes.
  • Serve with garlic bread
