Here’s an old favorite recipe; a one pot meal that’s delicious and will satisfy a family. It cooks quickly for a Dutch Oven meal and you can decide how spicy you want it to be.

Ingredients
- 1 Tbsp oil
- 1# lean ground beef
- 1 medium onion, chopped
- Salt and black pepper to taste
- 2 garlic gloves, minced or 2 tsp garlic powder
- 1 Tbsp chili powder
- 1 Tbsp brown sugar
- ½ Tbsp cumin
- Pint tomato sauce
- 2 cups water
- 8 oz elbow macaroni
- 1 cup corn
- 3 oz diced chilies
- 1 Tbsp dried cilantro
- 2 cups Monterey Jack or Mexican blend cheese
Instructions
- Start 28 coals, when white place the Dutch Oven over the coals.
- Add the oil and when hot brown the ground beef and onion.
- Add the spices and seasonings and stir through until fragrant.
- Add the tomato sauce, water, macaroni, corn, & chilies.
- Place the lid on the Dutch Oven and bring this to a boil.
- Add half of the cheese and then move half the coals to the lid. Cook for 15 minutes.
- Give it a stir and put the other half of the cheese and the cilantro over the top.
- Replace the lid and cook for another 15 minutes.
- Serve with garlic bread
