This was one of my mom’s favorites casseroles and she made it often – it was also one of my favorite dishes growing up. I should say this is similar to my mom’s recipe, as I don’t have hers and I had to do some research to find something close and then experiment to get the flavors right. The flavors go so well together, and it is a great way to use up some older celery.

Ingredients
- 1# of ground beef
- 1 cup chopped onion
- 1 cup chopped celery
- Seasoning of your choice (I like to use Creole Seasoning or Oriental 5 Spice depending on my mood)
- 2 cups of Beef Broth
- 1 can Cream of Celery Soup
- 2 Tbsp soy sauce
- 1 Tbsp Molasses
- 1 small can sliced mushrooms with liquid
- 1 cup of uncooked white rice
- Chow Mein noodles for garnish
Instructions
- Preheat the oven to 350 degrees
- Brown the ground beef in a skillet with some oil.
- Add the celery and onion when the beef is about half done and season generously.
- Spray or butter a casserole dish.
- Mix the soup, broth, soy sauce & molasses together until smooth.
- Mix all of the ingredients except for the Chow Mein noodles together and then fill the sprayed casserole dish.
- Bake covered for 60 minutes.
- Remove from the oven and check for seasonings.
- Sprinkle generously with the Chow Mein noodles and bake uncovered for another 15 minutes or until most of the liquid is absorbed by the rice.
