Holiday Sweet Potatoes
Mmmmmm, sweet potatoes, with those melted marshmallows over the top. While it’s not everybody’s favorite and a little goes a long ways, no holiday table is complete without these sweet potatoes.
Holiday Sweet Potatoes
Ingredients
- 3 large sweet potatoes peeled, boiled, and mashed
- 2 eggs
- ½ cup milk
- ¼ cup butter
- ¼ cup good bourbon
- ¾ cups brown sugar
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon allspice
- ½ teaspoons vanilla
- mini-marshmallows
Instructions
- Preheat your oven to 350°
- Mix all ingredients well; beat well, until light and fluffy. If needed add a little more milk.
- Spoon the sweet potato mixture into a buttered casserole dish.
- Bake at 350° until set, about 20 to 30 minutes.
- Garnish with marshmallows and bake until the marshmallows melt and just begin to brown.
