Bruschetta is a delicious and simple to make appetizer for any dinner but especially for Italian dinners. When you have a supply of fresh tomatoes and some good crusty bread your more than half way there.

Ingredients
- Italian bread, 12 slices, ¼ to ½” thick
- Olive oil, 3/4 cup
- 2-3 cloves Garlic
- Roma tomatoes, chopped, about 3 cups, or 2 jars of Bruschetta Tomatoes
- Shredded mozzarella, as much as you like
- Chopped Fresh Basil to taste
Instructions
- Mince the garlic finely and blend with the olive oil
- Dice and drain the Roma tomatoes
- Blend the tomatoes, basil to taste, and shredded mozzarella and set aside
- Brush the garlic/olive oil on the bread slices
- Toast the bread in the oven to just a crisp light brown
- Spread the tomato mix onto the bread and then a little more mozzarella on top.
- Toast the bruschetta just long enough to warm the tomatoes and soften the cheese.
