This is a fresh and tasty way to use up tomatoes when your garden is being overly generous.
This salad goes great with Italian, Greek, Spanish or Mexican dishes.

Ingredients
- 2-3 cups cherry tomatoes halved or Roma tomatoes chunked
- 1 cup chopped cucumber, peeled and seeded
- 1/3 cup crumbled Feta cheese
- 1 Tbsp fresh basil chopped
- ½ tsp dried oregano
- 1 Tbsp lemon juice
- 2 Tbsp chopped green onions, shallots, or chives
- 2 tsp olive oil
- Kosher salt and fresh cracked pepper to taste
Instructions
- Cut the cucumbers in half lengthwise, and scoop out the seeds. Cut them in half again lengthwise and chop into 1″ chunks. Sprinkle with kosher salt and let drain in a colander.
- Cut the cherry tomatoes in half or coarsely chop the Roma tomatoes.
- Mix all of the ingredients together and season to taste with kosher salt and cracked black pepper.
