Savory Beef and Game Rub

This is one I actually put together after trying several others from the ‘net. It’s a pungent blend that goes well with beef and game. This is very light on the salt, so you can dry brine your meat before using this. It works great on steaks and on roasts, mostly beef but I sometimes use it on pork as well.

Ingredients

  

• 2 parts salt
• 2 parts oregano
• 2 parts paprika
• 2 parts thyme
• 1 part marjoram
• 1 part garlic powder
• 1 part onion powder
• 1 part rosemary
• 1 part caraway seed
• 1 part black pepper
• 1 part cayenne or red pepper
• ½ part rubbed sage

Instructions

 

• Process the rosemary and caraway seed into smaller pieces, and crack the pepper.
• Thoroughly blend the ingredients and store in a cool place.
