Quesadilla

Quesadilla

“Just make yourself a dang quesadilla!” (Napoleon Dynamite)Quesadillas are probably easier to make than to describe. This is our go to meal for busy days – cheesy, gooey, tasty and speedy! These can be as simple or complex as you like – from just melted cheese

Shortcakes

Shortcakes

This is a simple recipe so you can make your own shortcakes for strawberries or other fruit.

Rustic Italian Bread

Rustic Italian Bread

This bread goes great with a wide variety of dishes such as Cajun and BBQ in addition to Italian. It also makes great garlic bread and bruschetta. My boys would eat the whole loaf before dinner if I let them. This recipe makes two loaves.

Drop Biscuits

Drop Biscuits

These are easy to make when you want to have some biscuits with your dinner. I think they go particularly well with soup or chili. This recipe is courtesy of America’s Test Kitchens. Makes 9-12 biscuits.

Chicken Cacciatori

Chicken Cacciatori

You’ve heard the name, but have you ever tried it? Translated as Hunter’s Chicken, this is a rustic comfort food that traditionally used what the hunter brought home – quail, rabbit, squirrel, whatever! This recipe is also a great way to use leftover turkey.

Camping Stir Fry

Camping Stir Fry

Here’s another complete meal with meat, veggies, and rice. Fresh ingredients are great, but this is camping so canned ingredients might make more sense. This can be served over plain white rice, or make seasoned rice or a packaged oriental rice side dish.

Breakfast Skillet

Breakfast Skillet

This hearty breakfast is delicious, and the whole cooked eggs are a nice change from the typical breakfast casserole with scrambled eggs.

Campfire Skewers

Campfire Skewers

Sure, these are a lot like shish kababs, but since I’m leaving the options open on marinade and seasonings I don’t want to call them that since shish kababs have a very specific seasoning profile.I like to cook the meat and the vegetables on separate

Italian Pasta with Sausage

Italian Pasta with Sausage

This is a tasty and filling meal. It can be prepared in your cast iron skillet, but it’s not quite a 1 pan dish since you need to cook the pasta separately. This goes great with some wine and a nice fresh salad.

Pork Ribs

Pork Ribs

Pork Ribs work great over an open fire. I like to use a grilling basket to hold the ribs if it’s just the two of us since one rack cut in half will fit. These go great with calico beans and cole slaw.
