Tzatziki Sauce

Ingredients
  

  • 2 cups 1 medium cucumber seeded, finely chopped or grated and drained
  • 1.5 cups of plain Greek yogurt
  • 2 tablespoon of olive oil
  • 1 tablespoon of lemon juice
  • 2 tsp dill weed
  • ½ tsp salt
  • Freshly ground black pepper
  • 2 to 4 cloves of garlic finely minced

Instructions
 

  • Grate the cucumber and sprinkle with salt to release the water.
  • Mix the remaining ingredients together in a bowl.
  • Squeeze the cucumber to remove any excess liquid. You can put it in a towel and then twist the towel to squeeze it.
  • Add the drained cucumber to the yogurt mix and stir through.
  • Drizzle with some additional olive oil and garnish with some dill or paprika.
