Preheat your oven to 350 degrees F.
Preheat your skillet over medium heat. Add the oil.
Add the beef to the skillet and cook until browned.
When the meat is about half done, add your diced onions and peppers to the skillet and cook until soft.
Add the garlic and cook until fragrant.
Add the Taco seasoning, stir through and cook for another 2 minutes.
Add the can of Enchilada sauce, stir through and cook for another 2 minutes.
Transfer the enchilada mixture to a sprayed 9x13 casserole dish.
Cover the top with tater tots, and then sprinkle the cheese over the tots.
Cook in the oven for 15-20 minutes until the tots are browned and the cheese is melted.
Garnish with the olives and the cilantro or chives.
Serve with salsa and chips.
