Total Time 40 minutes

Ingredients

  • 1 Onion chopped
  • 1 Bell Pepper chopped
  • 1 # Ground Beef
  • 2 Tablespoons Taco Seasoning or one packet
  • 2/3 s cup water Dad's tip - I use beer
  • 1 large bag of Restaurant Style Tortilla Chips
  • 1 # of shredded cheese - a Mexican blend if you find it.
  • 1 cup of salsa
  • Sour cream to taste
  • Green onions or chives diced
  • Black Olives
  • Other options: jalapenos diced tomatoes, sliced avocado, hot sauce

Instructions

  • Preheat your oven broiler and set the rack about 6 inches under the broiler.
  • Saute the onion and the bell peppers in a skillet with generous amount of oil. When browned and soft, remove to a bowl because you don't want to overcook them.
  • Next, brown the ground beef in the skillet. Add the taco seasoning and water, stir through and cook until the water is mostly evaporated and the meat is saucy.
  • Cover a sheet pan with foil and spread the chips out.
  • Spread the meat mixture out over the chips, and then sprinkle the shredded cheese over the top.
  • Put the sheet pan under the broiler. You want to melt the cheese and brown the chips just a little - it may only take a minute or so.
  • Pour the salsa evenly over the chips, and then top with some sour cream. Then spread the olives and other ingredients over the top and garnish with the chives.
  • Serve on the sheet pan and let the group dig in!
