Ingredients
  

  • 2 # of meat - a fattier cut is better for this. Pork shoulder beef chuck steak, or chicken thighs would be best.
  • Marinade
  • 2 onions
  • 4 garlic cloves
  • 1 cup of oil
  • 1/2 cup of vinegar - plain white vinegar wine vinegar, or balsamic vinegar would all work well
  • 2 Tbsp lemon juice
  • 2 Tbsp soy sauce
  • 2 Tbsp brown mustard
  • 2 Tbsp or more of red wine
  • 1 Tbsp hot sauce
  • Seasoning to taste

Instructions
 

  • Process the onions and garlic down to a sauce with a food processor.
  • Add the remaining marinade ingredients and mix.
  • Cut the meat up into 1-2 inch cubes.
  • Place the cubed meat into the marinade and refrigerate overnight and preferably 2-3 days.
  • Place the meat on skewers and season.
  • Cook the meat for about 10 minutes directly over hot coals, turning frequently.
  • You can cook onions and tomatoes along with the meat, but I would put them on seperate skewers to keep them from charring too much.
  • Serve over rice or egg noodles.
