Mediterranean Tomato Salad

Ingredients
  

  • 2-3 cups cherry tomatoes halved or Roma tomatoes chunked
  • 1 cup chopped cucumber peeled and seeded
  • 1/3 cup crumbled Feta cheese
  • 1 Tbsp fresh basil chopped
  • ½ tsp dried oregano
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped green onions shallots, or chives
  • 2 tsp olive oil
  • Kosher salt and fresh cracked pepper to taste

Instructions
 

  • Cut the cucumbers in half lengthwise, and scoop out the seeds. Cut them in half again lengthwise and chop into 1" chunks. Sprinkle with kosher salt and let drain in a colander.
  • Cut the cherry tomatoes in half or coarsely chop the Roma tomatoes.
  • Mix all of the ingredients together and season to taste with kosher salt and cracked black pepper.
