2-3cupscherry tomatoes halved or Roma tomatoes chunked
1cupchopped cucumberpeeled and seeded
1/3cupcrumbled Feta cheese
1Tbspfresh basil chopped
½tspdried oregano
1Tbsplemon juice
2Tbspchopped green onionsshallots, or chives
2tspolive oil
Kosher salt and fresh cracked pepper to taste
Instructions
Cut the cucumbers in half lengthwise, and scoop out the seeds. Cut them in half again lengthwise and chop into 1" chunks. Sprinkle with kosher salt and let drain in a colander.
Cut the cherry tomatoes in half or coarsely chop the Roma tomatoes.
Mix all of the ingredients together and season to taste with kosher salt and cracked black pepper.
