Ham Spread

Ingredients
  

  • Ham 1.5# or 4 cups
  • Onion ½ cup
  • Celery 1 stalk, including leaves
  • Sweet red pepper ¼ cup (or a small can of pimentos)
  • 1 Hard boiled egg chopped
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Dried parsley 1-2 tsp
  • Mayonnaise ¾ cup
  • Mustard of your choice 2 Tbsp (you can use a lot more to make this Deviled Ham.
  • Sweet relish or chopped sweet pickles ¼ cup
  • 1 Tbsp pickle juice optional but adds some more tanginess
  • Additional salt & pepper to taste

Instructions
 

  • Pre-chop the ham, onion, celery, red pepper, and egg to speed up the processing.
  • Add the ham, onion, celery, red pepper and egg to your food processor, along with a teaspoon each of salt, black pepper and dried parsley.
  • Pulse, patiently, in a food processor to get the desired consistency.
  • In a bowl, mix together the mayo, mustard, relish and pickle juice.
  • Add the processed ham and mix together.
  • Taste and adjust for salt and pepper, mayo, mustard, or sweet relish.
  • Smooth the top and cover with plastic wrap and chill for 2-4 hours in the fridge.
  • Serve on crackers or you can make sandwiches with pimento cheese.
