¼ cup (or a small can of pimentos)

1-2 tsp
Mayonnaise

Mustard of your choice
2 Tbsp (you can use a lot more to make this Deviled Ham.
Sweet relish or chopped sweet pickles

optional but adds some more tanginess
Additional salt & pepper to taste
Instructions
Pre-chop the ham, onion, celery, red pepper, and egg to speed up the processing.
Add the ham, onion, celery, red pepper and egg to your food processor, along with a teaspoon each of salt, black pepper and dried parsley.
Pulse, patiently, in a food processor to get the desired consistency.
In a bowl, mix together the mayo, mustard, relish and pickle juice.
Add the processed ham and mix together.
Taste and adjust for salt and pepper, mayo, mustard, or sweet relish.
Smooth the top and cover with plastic wrap and chill for 2-4 hours in the fridge.
Serve on crackers or you can make sandwiches with
pimento cheese
.
