Preheat your grill to high.
Clean and trim your loin roast of any excess fat. Keep some of the fat cap on to insulate the meat and keep it moist.
Rub the roast with a little olive oil and then season the roast with your favorite seasoning.
Turn your grill down to medium high and place the roast fat side down on the grill.
Place your thermometer into the center of the roast. This is essential to cooking your roast to a safe temperature while keeping the roast nice a juicy.
If you want, you can flip your roast to brown the other side, once it reaches about 120 degrees F.
When the roast reaches 145 degrees F remove it from the grill, place it on a platter and cover with foil.
Allow to stand for 10 minutes prior to carving.
