Pat the roast completely dry.
Mix the rest of the ingredients to make the paste rub. Add just enough olive oil to make the dry ingredients into a paste.
Apply the paste to the roast and wrap in plastic. Refrigerate overnight.
Heat your grill as hot as it can get.
Clean and oil the grate.
Sear the roast on high for 5 minutes on each side.
Place the roast in a roasting pan with rack and put back on the grill.
Turn one burner off and turn the other burner to medium.
Roast for 45-60 minutes, until 140 degrees internal temperature.
Remove the meat, leaving it on the rack and let it rest covered with foil for 10 minutes.
Use the drippings in the pan to make a nice dark gravy.
