Ingredients

butter or margarine

dried beef chopped up
or 1# browned ground beef or 1# asparagus for a side dish
½
onion
minced
salt and pepper or a seasoning blend
to taste
½
cup
all-purpose flour

milk
½
cup
sour cream
2
tablespoons
chopped parsley
or 2 teaspoons dried parsley flakes
Instructions
Melt the butter in a saucepan over medium-low to medium heat.
Cut the beef into thin strips; add to the melted butter.
Add the onion and cook until soft.
Blend in the flour and stir it through; keep stirring and cook it until it takes on some color.
Gradually add the milk and continue to cook, stirring constantly, until thickened and bubbling.
Stir in the sour cream and parsley, and check for seasoning; heat through.
Add milk if needed to thin.
Serve over toast, English muffins, mashed potatoes or rice.
Makes 4 servings (2 slices of smothered toast per person).
